Chickpeas are so incredibly easy to make! Apart from making hummus, making a stew out of them is one of my favourite ways to use them!
To make this I used:
1 can chickpeas
1 capsicum
1/4 cup coriander
2 bay leaves
1 onion
2 cloves garlic
1tsp turmeric
1 tsp powdered ginger
1 tbsp tomato paste
Salt and Pepper to taste
Directions
On a medium sized pot add a tablespoon of oil and add the onions and the garlic. Gradually stir until brown. Add the coriander, and the chickpeas. Add the bay leaves and cover with water. Bring to a boil for about 20 minutes, then add the turmeric, tomato paste, ginger and the salt and pepper. Simmer for about 15 minutes until the chickpeas are soft enough to mash.
I love Chick peas. I even eat them roasted as a snack. I am going to try this recipe
