Mango Cake

A mango cake is such a delightful way to enjoy one of my favourite fruits! This cake is soft, easy to make, and delish!
To make this I used:

1/2 cup sugar
1/3 cup canola oil
1 egg
1/2 cup plus 2 tablespoons all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3/4 cup chopped peeled mango

Preheat the oven to 150˚c.
In a small bowl, beat the sugar, oil and egg until well blended. In another bowl, combine the flour, baking powder, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well. Fold in the mango and transfer to a greased 6-inch round baking pan. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
