Dhal Curry

I never thought making dhal curry would be so easy! I always imagined it to be this long process that requires several hours to make! I used sweet potatoes, but you can use regular potatoes if you prefer. To make this I used:

2 cups dhaal
1 cup sweet potatoes (chopped)
1/2 cup eggplant
2 tsp ginger
1 onion
1 green pepper
2 cloves of garlic
2 tomatoes
1 tbsp butter

Directions

Add water to a saucepan, add one teaspoon of ginger, salt, then bring to the boil.
Add the lentils, let it come to a gentle simmer and cook for 5 minutes.
Add the diced sweet potatoesand continue to cook until the lentils are soft.

In a seperate pan, add the butter, add the onion, green pepper, eggplant, garlic, the remaining ginger and the tomatoes. Cook for a minute before adding the lentil mixture, then add the salt and pepper and allow to cook for another 10 minutes.

Instead of roti or rice, I served this with cottage bread.
