Black Rice Salad

Black rice is a new one for me! I’d never seen it, let alone tasted it before, but it was definitely worth trying! Instead of making it with a curry or stew, I thought of combining it with a few simple vegetables to make it a salad. To make this I used:

2 cups black rice
1 cup red cherry tomatoes
1 cup broccoli
1 onion (chopped)
2 cloves garlic
2tsp lemon juice
1tbsp soy sauce
Salt and Pepper to taste
1/2 cup sesame seeds,
Directions

Boil the rice in 4 cups of water with some salt sprinkled in.
Meanwhile heat a pan with a tablespoon of oil. Add the onions, and stir until golden brown, add the garlic and the broccoli. Add the soy sauce and mix well, cover and allow to cook for three minutes.

Remove from the pot, and mix with the rice. Add the cherry tomatoes, lemon juice and sesame seeds and toss all the ingredients well.

  1. Great recipe! Your food looks very good. Black japonica rice is my favorite kind of rice.

    One of the best dished I’ve ever made with it was this(recipe is in order of filling a salad bowl from the bottom of the salad to the top): chopped fresh spinach, black rice with tahini, tamari and olive oil, lightly cooked onions, steamed zucchini, black beans, heirloom corn, fava beans, freshly diced tomatoes, and topped with chopped fresh basil.
