I love how simple but delicious vegan recipes are. I’ve tried vegan recipes before, but I took it a step further and tried this raw vegan rice using cauliflower! To make this I used:
1 cup cauliflower
1 tsp lemon juice
Salt and Pepper to taste
Pulse the cauliflower in a food processor or blender, or if you don’t have either one, chop finely by hand. Place in a bowl.
Cut the tomato and avocado into small cubes and add to the cauliflower rice. Drizzle the lemon juice. Season with salt and pepper.
