Egg Curry

I love cooking with my mum! She’s such an amazing cook and so creative! Studying in India she picked up a few recipes along the way, and one of them is this egg curry which she still remembers. Very simple and easy to make!
To make this I used:

6 hard boiled eggs
2 tbsps vegetable oil
2 medium sized onions
2 red peppers
3 medium sized tomatoes
2 green chillies
1/4 cup coriander
2 tsps garlic paste
2 tsps ginger paste
1 tsp cumin powder
1/2 tsp turmeric
1/2 tsp red chilli powder

Directionsย 
Heat 2 tbsps of the cooking oil in a deep pan and when hot, add the onions. Fry till slightly golden, add the tomatoes, green chillies, red peppers into a smooth paste.
Add the ginger and garlic pastes, andall the dry spices, mix and fry for 3 minutes.
Add 2 cups of warm water and simmer on a medium flame. Add the boiled eggs gently.
Reduce the heat further and cook for an additional ten minutes.
