Cowpea Soup

It’s pretty cold here in Kenya, and by cold I mean I’m wrapped up in layers of clothing! And what better way to warm up than with a bowl of cowpea soup?

To make this I used:
500 grams cowpeas
200 grams potatoes
2 tbsp coconut milk
1 onion
1/4 cup coriander
1 clove garlic
Salt and Pepper to taste

Directions boil the cowpeas and potatoes with salt until soft. Don’t throw the water out just yet!

Meanwhile, on a saucepan, sear onions and garlic until golden brown. Add the corriander, and season with salt and pepper.
Add the potatoes and cowpeas and stir continuously for 1 to 2 minutes. Add all the ingredients to a blender and blend while gradually adding the coconut milk.
Blend while gradually adding the water used to boil the potatoes and the cowpeas until you get it to a consistency that you like.
That’s it! Super easy and delicious!
