I have to say after making vegan recipes this past month they are the bomb! They’re healthy and easy to make.
Today I have a healthy coconut and pea soup recipe for you! To make this I used:
1 cup of Peas
1 cup of coconut milk
1/2 cup of water
1/4 cup coriander
1 tsp lime juice
1 white onion
2 cloves Garlic
1 tsp nutmeg
Salt and Pepper to taste
Saute the onion, garlic, and coriander on a pan with a tablespoon of oil until golden brown. Add the coconut milk and water and allow to simmer for 20 minutes.
Add the peas, ginger and lime juice and cover until the peas are soft.
Add the nutmeg, and the salt and pepper.
Finally, blend all the ingredients until you get it to a consistency that you like!
I added some desiccated coconut once it was ready as I love the extra bit of crunch it gave the soup!
