I’ve been trying out a few gluten recipes recently and I’ve been loving the nice break from meat and animal and meat products.
I made cinnamon rice with mixed vegetables.
To make this I used:
2 cups brown gluten free rice
2 cinnamon sticks
1 cup sweetcorn
1 cup spinach
1/4 cup leek
3 sweet chili’s
1 white onion
2 cloves of garlic
1 cup long beans
Directions
Boil the rice in salted water. Wait for about 10 minutes and add the cinnamon sticks.
Meanwhile, add 2 tablespoons of oil on a heated skillet. Add the leek, onion, and garlic and allow them to brown. Then add the spinach and long beans. Cook for 10 minutes then add the sweet corn, and finally the sweet chili’s. Add salt and pepper, and some cayenne pepper to taste!

Thank you Kev!:-) It tasted great! The cinnamon completely transformed the rice and the pepper gave the vegetables some nice heat!

I love rice and veg, would never have thought about using cinnamon also, great idea.
