It’s mango season here in Malaysia and I wasn’t going to be left behind! I decided to try a mango rice salad recipe to get a good combination of savoury and sweet! To make this I used:
2 cups of rice
1/4 cup coriander
1 onion, chopped
2 cups cherry tomatoes
2tbsp lemon juice
2 honey mangoes
Salt and pepper to taste
Boil the rice in salted water under low heat.
In a saucepan, sautee the coriander with the onions and salt and pepper.
Meanwhile whisk the lemon juice with the cherry tomatoes,cucumber and mangoes.
Allow the rice to cool and mix all the ingredients in one bowl.
Add salt and pepper to taste.
