It’s been exactly one year since my first post! I can’t believe how fast time has flown. Thank you to everyone that follows and reads this blog!
I have a delicious sauteed mushroom recipe for you today.
Ingredients
1/4 cup coriander
1/4 cup parsley
1 cup spinach
1 onion
2 cloves garlic
1tbsp tomato puree
1 cup mushrooms
500 grams ground chicken
1 cup fettuccine pasta
1/4 nutmeg
Salt and Pepper to taste
Directions
In a medium sized pan, heat a tablespoon of oil. Add the onions and garlic and mix until brown, then add the parsley and coriander.
Add the ground chicken and cover and allow it to cook. Add the mushrooms and tomato paste, and simmer for 30 minutes.
Finally, add the spinach and simmer for an additional ten minutes. Add salt, pepper, and nutmeg to taste.
Serve with fettuccine pasta.
