I’ve never cooked with coconut milk before, but it’s turning out to be one of my favourite ingredients. I went a little crazy with this dish and put coconut in everything!
To make this dish I used:
2 cups of rice
2 medium onions, chopped
4 garlic cloves, finely chopped
2 cans unsweetened coconut milk
6 boneless, skinless chicken breasts, cut into chunks
1 cup of Peas
Boil the rice with 3 cups of coconut milk and 1 cup of water with half a cup of peas.
Meanwhile, in a saucepan caramelize onions, and garlic with black pepper, salt and nutmeg.
Add the chicken, cook until brown, add half a cup of peas, and add coconut milk, allow it to simmer for 30 minutes.
