I made this delicious French Vanilla Chocolate Mousse yesterday. I love whipped cream and always end up putting loads of it in everything, so feel free to use less than I did! I used:
2 cups chilled heavy cream
2 egg yolks
1 tablespoon sugar
1 teaspoon vanilla
175 grams French vanilla chocolate, chopped
Heat cream in a heavy saucepan until hot. Whisk together yolks, sugar, and a pinch of salt in a metal bowl until combined well, then add hot cream while whisking until combined. Transfer mixture to saucepan and cook over low heat, stirring constantly.
Melt chocolate in a metal bowl set over a pan of simmering water stirring frequently. Whisk the cream mixture into chocolate until smooth, then cool.
Beat remaining cream in a bowl with an electric mixer until it just holds stiff peaks.
Pour the mousse into a glass and add the cream on top, add some of the French vanilla chocolate to garnish.
